Yes, of course you can adjust the settings in the simulator to match your real flight behavior. I did this with my models and am very happy with the result.

But you can't use any FBL, any ESC, any battery, any blade, any motor and create the setup in the simulator with the settings from the transmitter. This can't work. There are too many other variables. The condition of the battery and motor, the setup of the ESC. How tight your blade grips are, the ambient temperature, which significantly influences the performance of the controller and motor, and of course the software version of your FBL system. Yes, just one software update of the FBL system can change the entire flight performance.
